Coconut Shrimp
Ingredients
2 lbs. shrimp
1 cup evaporated milk
2 eggs
1 loaf unseasoned bread crumbs
(you can make them in the food processor and bake for 15-20 min on low heat in the oven)
1/2 cup grated coconut
2 tbsp seasoning salt
oil
Directions
Add seasoning salt and set aside for a few hours
Beat eggs well and in a small bowl
Combine bread crumbs and coconut in a mixing bowl
Place shrimp in evaporated milk, then eggs, then crumb and coconut mixture
Fry until golden brown
Cooking time: 20 min Serves: 8
